Blueberry overnight oats
Ingredients
Oats
- ½ cup rolled oats
- 1 tablespoon chia seeds
- 1 tablespoon ground flaxseeds
- 1 teaspoon ground cinnamon
- ¾ cup almond milk
Yogurt layer
- ½ cup plain yogurt
- 1 tablespoon honey or maple syrup
Top
- 1 cup frozen blueberries
- 1 tablespoon chia seeds
- Lemon zest
Instructions
- Make the blueberry compote. Heat the blueberries in a saucepan for 15 minutes, then allow the mixture to cool. Mash it with a fork and add chia seeds. Set aside.
- Mix all ingredients for the base together and pour into a large jar.
- Mix the yogurt layer and spread on top.
- Repeat for the blueberry layer and add lemon zest.
- Refrigerate overnight.
